Last week we got to have our friends Jeremi and Natalie visit us along with their sweet baby Hallie (in the middle). We had such a great time catching up. Lots of fun on the beach and relaxing/eating at home. We enjoyed Popeye Eggs for breakfast one morning (a family favorite from both Brig's house and my house growing up). Natalie requested the recipe so here it is...sorry it is so late!
Popeye Eggs:
6 Eggs
1 tsp. vanilla
1 cup milk
1/2 tsp. salt
1 cup flour
1/2 cube butter
1/2 cup sugar
Melt butter in an 11x13 inch pan in the oven at 350 degrees. Put the eggs in the blender and blend until bubbly. Add milk, flour, sugar, vanilla, and salt and blend. Remove the melted butter from oven and pour egg mixture in pan on top of butter. Bake in the oven at 400 degrees for 15 minutes.
Sprinkle with powdered sugar. We had cut up strawberries on top as well. Delish.

Barb! We miss you guys so much. Berlin still talks about Macy girl. You guys look great and I am glad that you are updating your blog!!
We always called them German Pancakes. But any way you call them, they're incredible. Here's a good variation involving cinnamon and apple:
6 eggs
1 ½ c milk
1 c flour
3 Tbsp sugar
1 tsp vanilla
¼ tsp salt (optional)
¼ tsp cinnamon
a c softened butter
3-4 apples, peeled, thinly sliced
2 ½ Tbsp brown sugar
Combine eggs, milk, flour, sugar, vanilla, salt, and cinnamon; set aside.
Melt butter in 12" porcelain quiche dish or 9 x 13" baking dish. Add apples. Bake at 425ยบ until butter sizzles. Do not let brown.
Remove from oven; pour batter over apples immediately; sprinkle with
brown sugar. Return to oven; bake 15-20 minutes until puffed and
browned. Serve immediately. Yield: 6-8 servings.
